FISH ON THE GRILL | |
2 lbs. fish fillets (fresh or frozen) 2 green peppers or chiles 2 med. onions, sliced 1/4 c. butter, melted 2 tbsp. lemon juice 2 tsp. salt 1 tsp. paprika Dash pepper Cut fish into serving size pieces. Cut 6 pieces of aluminum foil (heavy duty) 12 x 12 inches each. Grease lightly. Place a portion of fish, skin side down, on foil. Top with green pepper and onion. Combine remaining ingredients. Pour over fish. Place packages on a grill about 5 inches from moderately hot coals. Cook for 45 to 60 minutes or until fish flakes easily when tested with fork. Can be baked in oven at 325 degrees for 25 minutes. Serves 6. |
