CHICKEN CURRY 
1 med. fryer
1 med. onion, chopped
1 sm. bell pepper
1 clove garlic
4-5 med. potatoes, cubed
3-4 carrots, sliced thin
1/4 c. cooking oil
About 3 tbsp. flour
2 tbsp. curry powder

Boil the fryer and debone it. Cut into small pieces and mix curry powder into meat. Saute onions and bell pepper until lump. Saute in the oil. Remove onions and bell pepper from the oil. Add the flour and make dark roux.

Use a big pot. Add the chicken broth, garlic, onions, and bell pepper and the chicken. Let simmer 15-20 minutes. Add potatoes and carrots. Cook until done. Salt and pepper to taste. Serve over rice.
