SOUTHERN BATTER BREAD | |
1/2 c. cornmeal 1 tsp. salt 1 c. water 1/2 c. milk 1 tbsp. melted lard 2 eggs, well beaten Mix the cornmeal and salt in a saucepan; blend in the water. Bring rapidly to boiling. Stirring constantly, boil 5 minutes (mixture will be very thick). Blend in the milk and lard. Vigorously beat into well beaten eggs. Thoroughly grease a 1 1/2 quart casserole and heat 2-3 minutes in oven. Turn batter into hot casserole. Bake at 400 degrees for 45-50 minutes or until bread tests done. Serve immediately with butter, gravy, or butter and syrup or honey. Makes 4 servings. |
