GRUYERE PARMESAN PUFFS | |
1 c. water 1/2 c. butter 1 c. flour 3/4 c. firmly packed, grated gruyere cheese 3/4 c. freshly grated Parmesan cheese 1 1/2 tsp. salt 1/2 tsp. cracked pepper 4 room temp. eggs Combine water and butter in heavy medium saucepan and bring to boil. Remove from heat. Add flour, salt and pepper and beat with a wooden spoon until well mixed. Set over medium heat and beat until mixture pulls away from sides of pan. Transfer dough to large bowl. Using electric mixer, beat in eggs, one at a time. Beat in cheeses. (Can be prepared up to 8 hours ahead.) Cover and refrigerate. Heat oil in deep fryer to 350 degrees. Drop by rounded teaspoons into oil. Fry in batches (do not crowd) until golden brown, 3 to 4 minutes. Remove with slotted spoon, drain on paper towels. Serve immediately. Makes about 60 puffs. |
