SNOWBALL CAKE 
2 envelopes Knox gelatin
4 tbsp. cold water
1 c. boiling water
1 lg. can crushed pineapple
1 c. sugar
1/2 c. lemon juice
1/8 tsp. salt
2 cartons (small) Cool Whip
1 lg. angel food cake
1 carton Cool Whip
Flaked coconut

Dissolve gelatin in cold water. Add boiling water, crushed pineapple, sugar, lemon juice and salt. Mix well and refrigerate. When partly jelled, add 2 cartons Cool Whip.

Line a large mixing bowl (about 11 inches wide) with plastic wrap. Break angel food cake (discarding brown part) into small pieces. Put a little of the gelatin mixture and cake until all is used. Chill in refrigerator overnight.

Turn mixing bowl upside down on cake plate and peel off plastic wrap. Frost cake with one carton of Cool Whip and sprinkle with coconut.
