SAUSAGE SOUP | |
1 tbsp. oil 1/2 c. chopped onion 1 lb. polish sausage or kielbassi cut into 1 inch slices and quartered 1 1/2 c. sliced carrots Salt and pepper to taste 1 tbsp. cornstarch mixed with 2 tbsp. water 2 med. apples peeled and chopped 1 1/2 - 2 c. beef broth 3 c. chopped cabbage In 3 quart saucepan, heat oil. Add apples and onions. Stir frequently. Cook 5 minutes. Add broth sausage, carrots, salt, pepper, bring to boil. Cover. Reduce heat. Simmer 30 minutes. Stir in cabbage and simmer 15 minutes or until cabbage is done. Stir in cornstarch. Bring to boil over medium heat. Boil one minute. Serves 4 to 6. |
