SWEET AND SOUR PORK 
1 1/2 lbs. pork, boneless, cut into 1" cubes
1-2 tbsp. oil
Salt & pepper
1 (20 oz.) can pineapple chunks
1/2 c. bottled barbecue sauce
1/4 c. vinegar
1 tbsp. cornstarch
1 lg. green pepper, cut into strips

1. Brown meat in hot oil in a large skillet or wok. Season with salt and pepper.

2. Drain juice from pineapple into a bowl, set fruit aside. Combine pineapple juice, barbecue sauce, vinegar and cornstarch; blend thoroughly. Add to meat in wok and stir until blended.

3. Simmer, uncovered, about 35 minutes. Add pineapple and green pepper; simmer 10 minutes.

4. Serve with rice. Boneless chicken cubes can be substituted for pork. 5 to 6 servings.
