SAUERKRAUT RELISH SALAD 
3 1/2 c. sauerkraut, drained
1 1/2 c. sugar
3/8 c. vinegar
4 tbsp. kraut juice
3/4 c. celery, chopped
3/4 c. onion, chopped
1 sm. jar pimento

Mix together and boil for 3 minutes the sugar, vinegar, kraut juice. Cool. Pour over sauerkraut and add celery, onion and pimento.

Best made a day or so ahead.
