CINNAMON OAT PANCAKE MIX 
4 c. quick cooking oats
4 c. whole wheat flour (can use white)
1 c. dry milk
2 tbsp. ground cinnamon
3 tbsp. baking powder
1/2 tsp. cream of tartar

Combine all ingredients in large bowl; stir well. Store in airtight container in refrigerator.

To make pancakes: Beat 2 eggs. Gradually beat in 1/3 cup vegetable oil. Alternately beat in 2 cups of mix and 1 cup of water. Makes 12 (5 inch) pancakes.
