CHEESE POCKETS 
textcen (GERMAN) KASE KNIPFULA

2 c. cottage cheese
1 egg yolk
1 tbsp. finely chopped onion greens (Just onion)
1/2 tsp. salt

Mix and set aside.

DOUGH:

2 c. flour
1 tsp. salt
1 whole egg and 1 egg white
1/2 c. water

Stir dough; roll out on a floured board and cut into four inch squares. Put a teaspoon of the filling in the center and fold dough over into a triangular shape. Pinch edges together.

In large pan boil at least 2 quarts of salted water. Place pockets into boiling water, stir gently. When water comes to a boil again remove from heat. Drain. Dot with butter.
