CARROT CAKE | |
1 c. oil 1 1/2 c. sugar 3 eggs 2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 1 c. crushed pineapple and juice 2 c. shredded carrots 1 c. flaked coconut 1 c. chopped nuts Scant tsp. salt Mix oil, sugar and eggs. Add remaining ingredients. Pour into greased 9 x 13 inch pan and bake at 350 degrees for 50 minutes. Cool and frost with cream cheese frosting. CREAM CHEESE FROSTING: 1 (3 oz.) pkg. Philadelphia cream cheese 1/4 c. butter, softened 2 c. powdered sugar 1 tsp. vanilla 3 drops maple flavoring Mix together. |
