BROWN SUGAR PUDDING 
1 c. flour
1 tsp. salt
2 tsp. baking powder
2/3 c. sugar
1/2 c. skim milk
2 tbsp. oil
1 tsp. vanilla
1/2 c. nuts (walnuts, pecans)
1 c. brown sugar
1 1/2 c. boiling water
2 tbsp. butter

Sift the flour, baking powder, salt, and sugar together. Place in mixing bowl; beat in the milk, oil, and vanilla. Stir in the nuts. Spoon into a baking pan that has been well oiled.

Combine the brown sugar, boiling water, and butter. Bring to a boil; stir until sugar dissolves. Pour over the top of the batter. Bake in preheated oven of 350 degrees F. for 35 minutes. The syrup will be in the bottom. Cool 50 minutes before serving.
