LAZY LASAGNA | |
1 lb. mild Italian sausage or ground beef 30 to 32 oz. jar spaghetti sauce 1 c. water 2 eggs, beaten 3 c. cottage cheese 2 tbsp. parsley 1/2 tsp. leaf oregano 2 tbsp. Parmesan cheese 8 oz. uncooked lasagna noodles 16 oz. thinly sliced Mozzarella cheese Brown meat in skillet. Add spaghetti sauce and water. In separate mixing bowl, beat eggs, stir in cottage cheese, parsley, oregano, sauce and Parmesan cheese. In 9 x 13 inch pan or lasagna pan, layer meat, uncooked noodles, egg-cottage cheese mixture, and Mozzarella cheese slices. Repeat, ending with remaining meat sauce. Cover and refrigerate several hours or overnight. Bake uncovered at 350 degrees for 50 to 60 minutes. Extra shredded Mozzarella cheese may be put on top the last 30 minutes of baking, if desired. After cooking, let the lasagna sit for at least 10 minutes so it can be cut into squares for serving. |
