CLAM CHOWDER 
1 large can Costco chopped clams
6 c. diced potatoes
1 1/2 c. water
1/2 medium onion, chopped
2 c. milk
dash of oil
2 tbsp. all-purpose flour
1 c. half and half
1 1/2 tsp. salt
pepper to taste
1 c. diced chilies

Strain liquid from clams, reserving 1/2 cup. In large pot, saut onions, then add reserved clam liquid, potatoes and water. Bring to a boil; cover and simmer until potatoes are tender (15 to 20 minutes). Stir in clams. Blend 1/4 cup milk into flour, then blend into remaining milk. Stir into chowder with half and half and cook, stirring until boiling. Add salt and pepper; stir and serve with soup crackers with a dab of butter. Can add a dash of Tabasco sauce.
