APPLESAUCE CAKE ROLL 
CAKE:

3 eggs
1/2 c. applesauce
3/4 c. sugar
1/4 tsp. salt
1 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 c. walnuts

FILLING:

1 (8 oz.) and 1 (3 oz.) pkg. cream cheese
4 tbsp. milk
1/4 c. sugar

Beat eggs well, add applesauce, and dry ingredients a little at a time. Mix and add walnuts. Grease jelly roll pan and line it with wax paper. Pour batter. Bake at 350 degrees for 15 to 20 minutes. Turn the cake on a towel, cover with powdered sugar. Pull wax paper off and roll with the towel and let cool.

Mix the filling together. Unroll cake, spread filling and re-roll. Wrap with foil and place the cake roll in the freezer until ready to serve. Slice cake when frozen.
