ORANGE SCANES SCOTTISH 
2 2/3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tbsp. sugar
1/2 c. butter
1 tbsp. grated orange rind
1/2 c. or more raisins
3 tbsp. vinegar
3/4 c. orange juice
1 egg, beaten

Mix dry ingredients with butter until mixture is like coarse corn meal. Stir in orange rind and raisins. Make a hollow in center of flour. Add liquids and egg all at once. Stir until all is moist. Turn onto a floured board. Knead gently 8-10 times, adding more flour if necessary. Roll into a 12 x 7 inch rectangle. Cut into 3 inch or larger squares. Cut each square in half diagonally to make 2 triangles. Brush tops with milk. Sprinkle with sugar.

Place on greased baking sheet. Bake at 425 degrees for 15 minutes or until golden brown. Serve hot with butter. Good cold too if kept in tightly covered dish. Makes 16 or more.
