MASHED SWEET POTATOES WITH
PECANS
 
3 lb. sweet potatoes, peeled, cooked & mashed or canned & drained
1 egg
3/4 c. brown sugar
1/2 c. butter, melted
1 c. pecans
1 tsp. cinnamon
Dash of salt
3 tbsp. orange juice

TOPPING:

1/2 c. brown sugar
1/4 c. butter, melted
Pecans

Mix all ingredients, except topping and put in casserole dish. For topping, combine the brown sugar and melted butter and pour on top of sweet potatoes in casserole. Add as many pecans as you want to the top. Bake at 375 degrees for 20 to 25 minutes.
