CHICKEN STIR FRY 
1 boned chicken breast
1 med. onion
1 red bell pepper
1 green bell pepper
1 rib celery
1 carrot
2 c. snow peas or 1 c. garden peas
1 c. packed fresh spinach
1/2 c. sliced mushrooms
1 can cream of chicken soup
Soy sauce
Cooked rice or noodles

Slice chicken breast in thin slices, sprinkle with soy sauce to taste. Slice onion into strips, slice peppers into rings, thinly slice celery and carrots, leave snow peas whole, tear spinach into small pieces.

Heat wok or frying pan, add 2-3 tablespoons cooking oil. Stir fry chicken until done. Add carrots and celery, cook 1-2 minutes. Add onions and peppers, cook 1-2 minutes. Add mushrooms and peas, cook 1 minute. Add soup and enough water to make a thick gravy. Place spinach on top, steam until tender. Serve on rice or noodles. Serves 4-6.
