LORRAINE'S CHEESECAKE 
1 1/2 lbs. ricotta cheese
2 (8 oz.) pkgs. cream cheese
16 oz. sour cream
1 c. sugar
6 lg. eggs
1 tbsp. lemon extract
1 tbsp. vanilla
8 tbsp. flour

Heat oven to 350 degrees. Grease and flour spring form pan well. Cream the cream cheese. Add all other ingredients. Mix in bowl on high speed for 10 minutes. Mixture will be like liquid. Pour into spring form pan. Bake in oven for 1 hour. Turn off oven. Add cherries or blueberries on top and let remain in oven for one hour more. Remove from oven and cool for 15 minutes. Refrigerate for about 3 hours. Yields 16 servings.
