BAKED SQUASH 
1 lb. tender squash
2 med. size onions, chopped fine
1 c. bread crumbs
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. black pepper
2 eggs, separated
1/2 c. butter or other shortening, melted

Thinly peel squash and grate. Add other ingredients and mix well. Fold in stiffly beaten egg whites. Sprinkle top with additional bread crumbs. Bake at 350 degrees until nicely browned.
