CRUSTY CURRIED CHICKEN WITH
BISCUITS
 
2 tbsp. salad oil
1 tbsp. curry powder
1 1/2 lbs. chicken pieces or 2 lbs. broiler fryer
1/2 c. buttermilk baking mix
1 tsp. salt
1/8 tsp. pepper
1/4 c. water
2 cans peach halves, if desired

Heat oven to 425 degrees. Pour oil in 9"x9"x2" pan or 11 3/4" x 7 1/2". Mix 1/2 cup baking mix, curry powder, salt and pepper. Coat chicken with mixture. Place chicken skin side down in pan. Bake, uncovered 35 minutes, mix 1 cup baking mix and water to soft dough, turn chicken. Push piece to one side of pan. Drop dough by spoonful(s) into pan in single layer next to chicken. Arrange peaches on chicken. Bake until biscuits are light brown and chicken is tender, about 15 minutes.
