THAI PEANUT NOODLES | |
8 oz. thin spaghetti 1/2 c. unsalted peanuts 3 tbsp. soy sauce 2 tbsp. lemon juice 1 tbsp. honey 3 tbsp. water 1 tbsp. vegetable oil 2 cloves garlic, chopped 1/2 c. thinly sliced onion 1 c. snow peas, cut into 1" lengths 3 c. fresh bean sprouts 1/4 c. thinly sliced green onions (green part only) Cook spaghetti and drain. Chop peanuts (blender good). Combine soy sauce, lemon juice, honey and water. Heat oil in pan over medium heat. Add garlic and onions. Stir about 2 minutes, then add snow peas, bean sprouts and 1/2 the soy mixture. Cook about 3 minutes, stirring. Add remaining soy mixture along with chopped peanuts, green onions and drained pasta. Toss well and serve. 4 servings. |
