BACON CHEESE STRATA 
6 to 8 slices of bread
1/4 c. butter, butter, bacon drippings
1 lb. bacon, broiled & drained
8 to 10 oz. shredded cheese (Colby, Monterey Jack or Muenster)
10 eggs, beaten
2 1/2 c. milk

Butter bread, quarter each slice. Place buttered side of bread down in baking dish. Alternate layers of bread, bacon, cheese in baking dish, 9 x 13 x 2 inches. End with cheese on top.

Mix remaining ingredients (eggs and milk). Pour over layers. Cover, chill 6 hours or overnight. Bake at 350 degrees for 50 minutes or until firm. Let stand for a few minutes. Cut into squares. Serves 6 to 8. Bacon can be substituted with mushrooms, sausage, ham, asparagus, broccoli flowerets, etc.
