LETTUCE SOUP | |
6 or more slices bacon 1 lg. onion, chopped 2 c. sliced celery 1 can cream of chicken soup 1 can cream of mushroom soup 3 c. water 1 head lettuce, separated into small leaves 1 tbsp. Bitters 1 lb. ground beef 1 tsp. salt 1/4 tsp. pepper Fry bacon until crisp; remove pieces and saute onion and celery in fat until golden. Add soups and water; bring to boiling point. Add lettuce and stir until wilted; add bitters. Mix ground beef with salt and pepper; shape into small balls. Drop into soup and simmer 15 minutes. Serve dusted with Parmesan cheese. Serves 8. |
