APPLESAUCE OATMEAL COOKIES 
2 c. sugar
1 c. shortening
2 eggs
3-1/2 c. flour
2 c. oatmeal
2 c. raisins or chocolate chips
1 c. chopped walnuts
2 c. applesauce with 2 tsp. baking soda added
2 tsp. cinnamon
1 tsp. salt

Cream shortening and sugar. Add eggs and blend well. Add remaining ingredients and blend. Drip by spoonfuls onto a greased cookie sheet and bake at 350°F for 12 minutes.

THIS RECIPE IS AMAZING! I halved the recipe and omitted the raisins, walnuts, and chocolate chips (none in stock; too lazy to run to the store). The cookies turned out moist, chewy, and delicious! They were gone in one sitting. Even my dogs enjoyed them (and they are picky eaters).

I found an old handwritten recipe for applesauce oatmeal that my mother used, but it was missing details, it only listed ingredients. She has been gone for many years and I wanted to make the very same recipe. This is nearly the identical one. I am delighted and can't wait to bake them. They were the most delicious and moist cookies.

I used raw sugar (azucar moreno cana integral), 1 1/2 c raisins, levadura en polvo (vs. baking soda per se), no walnuts and added a bit of nutmeg for the last few batches. They were very moist and the apple flavor was very nice.
