MAKANA BREAD | |
1 c. chopped walnuts 2.25 c. granulated sugar 3 eggs 1 tsp. baking powder 3/4 tsp. salt 6 tbsp. buttermilk 1.5 c. mashed bananas (3 lg.) 3/4 c. shortening 3 c. sifted flour 1.25 tsp. baking soda 1/2 tsp. mace, optional Preheat oven to 350 degrees. Cut bananas into pieces and puree in blender jar. Cream sugar and shortening with electric mixer at medium speed. Add eggs and beat until light and fluffy. Mix together flour, baking powder, baking soda, salt and mace. Add to creamed mixture alternately with buttermilk. Mix thoroughly. Fold in nuts and banana puree. Pour into greased and floured tube or Bundt pan. Bake 60-70 minutes or until bread tests done with cake tester. Cool in pan on wire rack for 1 hour. Remove to serving tray. Slice and serve. Yields 12-14 servings. |
