SPINACH PIE FROM TURKEY 
DOUGH:

4 1/2 c. white flour
1 c. water (or more)
2 tsp. salt
1 c. olive oil

Mix sifted flour and salt together and add water gradually. Mix by hand until all is moistened. Cover and set aside 30 minutes. Make 2 balls; form these into 10 balls.

You will use 10 for the bottom, 10 for the top and you may need extra flour to roll out each ball into 6-inch rounds. While dough is resting, make the filling as follows.

FILLING:

1 pkg. fresh clean spinach, chopped
1 med. onion, chopped
1/4 tsp. red pepper, chopped
1 tsp. salt
1/2 tsp. black pepper
1/2 green pepper, chopped

Mix ingredients together; set aside. Preheat oven to 400 degrees. Assemble as follows. Roll out 1 ball of dough 6 inches round. Brush with oil and roll out next ball. Brush with oil and make a stack of 10 layers. Flatten this by rolling out to 15 inches in diameter. Put into a 13-inch metal pie pan and trim edges.

Put on the filling. Roll out the remaining 10 balls as before, making a 15 inch diameter and place on top of filling. Trim, and fix edge as desired. Bake 40 minutes.
