WALNUT CARROT CAKE 
1/2 c. shortening
1 c. sugar
2 c. grated raw carrots
2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/3 c. orange juice
1/2 c. chopped walnuts
1 c. raisins, soaked overnight in brandy

Preheat oven to 350 degrees. In large bowl, mix ingredients in order listed. Save small amount of flour to mix with nuts and raisins. Add nuts and raisins and mix well. Pour mixture into greased and floured pan and bake for one hour or until done.
