CHICKEN AND WILD RICE CASSEROLE 
1/2 chicken
1 can cream of mushroom soup
1/2 c. chicken broth
Velveeta cheese
1 pkg. UNCLE BEN'S® mixed wild and white rice (DO NOT USE ENVELOPE)

Cook chicken with seasonings: celery, onion, parsley, salt and pepper. Cook rice according to package instructions, omitting seasonings in package. Bone chicken, mix rice and chicken. Add soup and broth. Grate cheese on top. Cover, bake at 350 degrees for 45 to 60 minutes longer if refrigerated. Uncover last few minutes. Serves 3 to 4. Double recipe will fill 2 quart casserole and serve 6 to 8. Can be made day before, refrigerated, then just put in oven.
