POTATO SOUP 
1 lg. onion, diced
2 c. carrots, diced
2 c. celery, diced
2 c. ham, diced
4 c. potatoes, diced
1/4 c. butter
8 c. water
2 c. half & half
Dash of parsley
1 tsp. chives
Salt & white pepper

Combine onion, carrots, celery, ham and butter. Fry until onions are brown. Stir in water. Add potatoes, half & half, parsley and chives. Cook 1/2 to 1 hour or until potatoes are tender. Season to taste with salt and pepper. Thicken with 1/2 cup cornstarch.
