MAKE YOUR OWN CONDENSED SOUP MIX
(LOWER SALT)
 
Instead of opening a can of condensed cream soup for the next casserole you make, add your own soup mix. The following directions for 3 cups of mix will make the equivalent of nine (10 1/2 oz.) cans of condensed cream soup.

SOUP MIX:

2 c. nonfat dry milk powder
3/4 c. cornstarch
1/4 c. bouillon crystals (beef or chicken)
1/2 tsp. pepper
2 tbsp. dried onion flakes
1 tsp. dried basil, crushed
1 tsp. dried thyme, crushed

Combine all ingredients and mix well. Store in airtight containers. To make equivalent of 1 can of condensed soup, combine 1/3 cup dry mix with 1 1/4 cups water in saucepan. Cook and stir until thickened.

Variations: cream of mushroom add 1 (4 oz.) can drained mushrooms. Cream of celery, add 1/4 cup chopped celery. A can of commercial cream of mushroom soup has 331 calories and 2, 369 mg. sodium. This soup mix has 101 calories and 719 mg. sodium.

This works, but I'd advise using low-sodium bouillon crystals, otherwise it's pretty salty.

For the bullion - purchase the "Herb Ox" brand. Has NO sodium... its all flavor. If you cannot find this in your store - it is available on line.
