PRIZE WINNING BANANA NUT BREAD 
2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/2 c. shortening
1 c. sugar
2 eggs
1 c. mashed bananas (very ripe)
1/2 c. chopped nuts

Sift together 2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1 teaspoon salt.

Cream well 1/2 cup shortening and 1 cup sugar.

Blend in 2 eggs.

Add 1 cup mashed bananas.

Blend in sifted dry ingredients.

Fold in 1/2 cup chopped nuts.

Pour into greased 9x5x3 inch pan. Brush batter into corners of pan leaving center slightly hollowed. For well rounded loaf allow to let stand 20 minutes before baking. Bake 60 to 70 minutes at 350 degrees. Cool before slicing.
