YOGURT MUFFINS | |
2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1/4 c. sugar 1 tsp. vanilla 2 eggs 1/4 c. plain low-fat yogurt 1/4 c. butter, melted Mix dry ingredients in small bowl. In larger bowl, mix remaining ingredients. Add dry ingredients and mix just until blended. Bake 15 minutes at 375 degrees. Makes 6 large or 12 regular. Can add bananas, blueberries, poppy seeds, lemon (2 tablespoons juice, 1 teaspoon rind). |
