CHICKEN CASSEROLE WITH WALNUTS | |
2 c. cooked, boned chicken, cut into cubes 1 c. celery, diced 2 tsp. onion, chopped 1/2 c. chopped walnuts 1 1/2 c. cooked rice 1 can cream of chicken soup 1/2 tsp. salt 1 tbsp. lemon juice 3/4 c. mayonnaise 1/4 c. water 2 c. crushed potato chips In a large bowl, combine chicken, celery, onion, nuts, rice, chicken soup, salt, and lemon juice. Blend mayonnaise with mixture. Turn into a well-greased 9- inch square pan. Top with crushed potato chips. Bake at 450 degrees until mixture is bubbly and crust is crisp and golden brown. |
