APPLESAUCE-OATMEAL MUFFINS 
1 1/2 c. oats (quick or old fashioned)
1 1/4 c. flour
3/4 tsp. baking soda
1 tsp. baking powder
3/4 tsp. cinnamon
1 c. unsweetened applesauce
1/2 c. skim milk
1/2 c. firmly packed brown sugar
3 tbsp. vegetable oil
1 egg white

TOPPING:

1/4 c. oats
1 tbsp. brown sugar
1/8 tsp. cinnamon
1 tbsp. butter

Heat oven to 400 degrees. Line 12 muffin baking cups. Combine oats, flour, cinnamon, baking soda and baking powder. Add applesauce, milk, brown sugar, oil and egg white. Mix just until dry ingredients are moistened. Fill muffin cups almost full.
