JINKA’S CHRISTMAS MUSHROOM SOUP 
soup pot in size you choose
3 onions, sliced in slivers
6 tablespoons butter
1 tbsp. flour
2 cans beef broth
cold water, enough to fill pot 3/4
2 lb. fresh mushrooms, cleaned and sliced
salt, pepper, paprika, to taste
sauerkraut juice, to taste

Brown onions in butter to a golden brown. This takes a long time, do not rush the process! Remove onions from pot with slotted spoon. Check your butter, about 2 tablespoons. Add one (1) tablespoon of flour and stir until brown (not too dark).

Add beef broth. Add cold water about 3/4 full. Add browned onions. Add mushrooms, salt, pepper, paprika. Add sauerkraut juice - all this to your taste.

Cook 3 to 4 hours on low heat. Do not boil!
