ZUCCHINI PARMESAN 
3 tbsp. vegetable oil
6 sm. zucchini, sliced
1 Vidalia onion, sliced
1 (14 1/2 oz.) can stewed tomatoes, drained
2 tbsp. tomato paste
1 tsp. Italian seasoning
1 tsp. seasoned salt
1/2 tsp. black pepper
1/4 c. Parmesan cheese, grated

Heat oil in large skillet; add zucchini and onion slices. Saute until tender. Add remaining ingredients; cover and simmer for 10 minutes, stirring occasionally. Sprinkle with Parmesan cheese before serving. Serves 6-8.
