OLD FASHIONED GERMAN POTATO
PANCAKES
 
3 c. raw cubed potatoes (white)
2 eggs
2 tbsp. flour
1/2 tsp. baking powder
1 tsp. salt
1/2 sm. onion (chopped fine)

Peel potatoes; then grate by hand or cube and use a blender to grate. Do not over blend!

Mix all ingredients, then fry in preheated skillet (using bacon drippings, oil or "Pam" spray). Browning on each side at medium-high heat. Drain on paper towel. Cool. Serve with applesauce! Yield: 12 pancakes.
