BISCUIT BLINTZES 
1 pkg. pot cheese
1 (8 oz.) pkg. cream cheese
4 eggs
Oil or butter
1 c. sugar
Salt
1 container (8 oz. cottage cheese, drained)
1 box of Uneeda biscuit (salted crackers)

Beat together pot cheese, cream cheese, cottage cheese, 1 egg, 1 cup of sugar, 4 tablespoons of melted butter. Let stand, add 1 teaspoon salt. Beat 3 eggs. Dip Uneeda Biscuit crackers in egg until crispness is gone. Place mixture between crackers. Place sandwich cheese crackers in well greased baking pan for 25 to 35 minutes or until brown.
