MOCK APPLE PIE 
36 Ritz crackers
2 c. water
1 c. sugar
2 tsp. cream of tartar
2 tbsp. lemon juice
butter
Cinnamon
2 pastry shells

Break crackers coarsely into pastry shell. Combine water, sugar and cream of tartar in saucepan; boil gently for 15 minutes. Add lemon juice; cool. Pour over crackers. Dot with butter and sprinkle with cinnamon. Cover with top crust. Cut slits on top. Bake at 425 degrees for 30 to 35 minutes.
