MARBLED CHOCOLATE CHEESECAKE | |
Preparation time: 20 minutes. Baking time: 50 to 60 minutes. Oven temperature: 300 degrees. Serves: 12. (One 9 inch cheesecake.) Calories: 540 each. 2 c. chocolate wafer crumbs 5 tbsp. melted butter 3 pkgs. (8 oz. each) cream cheese, room temp. 1 c. sugar 5 eggs 1 1/2 tsp. vanilla 2 oz. (2 sq.) semi-sweet chocolate, melted FROSTING: 6 oz. (6 sq.) semi-sweet chocolate, melted 1/2 c. sour cream 1. For the crust, combine chocolate wafer crumbs with the melted butter. Press into bottom and sides of 9 inch springform pan. 2. For the filling, combine cream cheese, sugar, eggs and vanilla in large mixer bowl. Beat until smooth nd fluffy. 3. Pour half of the cheese mixtur einto crumb-lined pan. 4. Blend the 2 ounces melted chocolate into remainign cheese mixture. 5. Drizzle chocolate mixture over white mixture in pan to make swirls. 6. Bake at 300 degrees for 50 minutes or until set. 7. Chill 2 hours. 8. For the frosting, combine the 6 ounces chocolate with the sour cream. Spread on the chilled cheesecake. 9. Serve immediately or refrigerate until ready to serve. TIPS: This can be made 2 to 3 days in advance of a party and kept in the refrigerator, or the cake can be frozen for up to 3 weeks. |
