BAKED APPLE PUDDING 
1/3 c. softened butter
1 c. sugar
1 egg, beaten
1 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1 tsp. vanilla extract
2 c. grated, unpeeled apples
1/2 c. chopped pecans

Cream butter and sugar. Add the egg and beat well. Combine the dry ingredients and add to the creamed mixture, stirring well. Spoon into 8 inch square pan. Bake at 350 degrees for 35 minutes. Serve warm or cold with brandy sauce.

BRANDY SAUCE:

1/4 c. softened butter
1 c. powdered sugar
1 tsp. boiling water
2 tbsp. brandy
Dash of salt

Beat until fluffy.
