CHICKEN OR VEAL PICCATA 
1 lb. chicken or veal
Salt and pepper to taste
Flour
3 tbsp. butter
1 tbsp. olive oil
2 garlic cloves, minced
1/2 lb. mushrooms, sliced thin
2 tsp. fresh lemon juice
1/2 c. white wine
3 tbsp. minced parsley

Sprinkle meat with salt and pepper. Dredge in flour. In pan melted butter and oil. Add garlic and saute briefly. Add meat and saute 1 to 2 minutes on each side and remove from pan. Add mushrooms to pan and saute 1 minute.

Return meat to pan. Stir in lemon juice and wine. Simmer covered for 15 minutes. Garnish with parsley.
