KENTUCKY APPLE DUMPLINGS 
2 c. apples, peeled, sliced thin
1 c. sugar
1 1/2 tsp. cinnamon
Dough enough for 2 pie shells

Peel, slice and mix apples with sugar and cinnamon. Roll out crust and cut in 4 inch squares. Place apple mixture in the middle of each square. Pinch each square together. To close the mix, use a little water on hands to seal well. Place in a buttered pan and bake at 400 degrees until apples are done. Serve with Orange Sauce, hot or cold.

ORANGE SAUCE:

1 c. orange juice
1 c. apple juice
1 1/2 c. sugar
2 tsp. cinnamon
1/4 c. butter
3 tbsp. cornstarch

Mix cornstarch with sugar and some juice until smooth. Add butter and remaining juice, cook until clear, stirring constantly.
