OATMEAL MUFFINS 
1 1/2 c. boiling water
1 c. oats
1/2 c. shortening
1/2 c. sugar
1/2 c. brown sugar, packed
2 eggs, beaten
1 1/2 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt

Pour boiling water over oats; let stand 20 minutes. Cream shortening and sugar. Add eggs. Add flour, cinnamon, soda and salt. Add oatmeal, mix well. Bake at 325 degrees for 30 minutes. Makes 18 muffins.
