BROCCOLI QUICHE 
1 1/2 c. cooked rice (long cooking)
3 oz. sharp Cheddar, divided into 1 1/2 oz.
1 pkg. cooked and drained frozen broccoli
1 c. skim milk
1/8 tsp. pepper
3 eggs
1/2 c. sliced canned mushrooms
3 tsp. chopped onions
1/4 tsp. salt

Preheat oven to 425 degrees. In medium bowl combine cooked rice, egg (1) and 1 1/2 ounces of the cheese. Mix well, press onto sides and bottom of 9 inch pie plate to form crust. Bake for 20 minutes.

While this is cooking, in large bowl, beat remaining eggs, add seasoning, cheese, broccoli, onions, mushrooms and milk. Mix well, put into crust. Bake at 375 degrees for 30 to 45 minutes, or until knife inserted in center comes out clean.
