BROCCOLI & CHEESE CASSEROLE 
4 pkg. frozen chopped broccoli
3" chunk (from 1 lb. size) Velveeta cheese
1 stick butter
12 Ritz crackers

1. Cook broccoli according to directions on package - omit salt.

2. Cut stick of butter in half.

3. Melt 1/2 stick butter with Velveeta cheese - then mix sauce with broccoli. Put mixture in 2 quart casserole.

4. Crush 12 Ritz crackers. Combine with other 1/2 stick of butter.

5. Sprinkle over broccoli mixture.

6. Bake at 350 degrees for 30 minutes or until bubbly.

Casserole can be made ahead of time and popped into the oven 1/2 hour before serving.
