CREAM OF BROCCOLI SOUP
(MICROWAVE)
 
1 can (4 1/2 oz.) chicken broth
1 c. milk
2 tbsp. butter
2 tbsp. corn starch
1/2 tsp. salt
1/2 tsp. parsley flakes
1/4 tsp. white pepper
1/4 tsp. nutmeg
1 1/2 c. finely chopped broccoli

In 2 quart microproof bowl combine all ingredients except broccoli. Stir in corn starch, add broccoli. Cover with plastic wrap. Cook on high for 13 to 14 minutes or until broccoli is fork tender. Stir once during cooking time.

Let stand 3 minutes before serving. Serves 4 to 6. Cooking time 13 to 14 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
