IRISH BROWN SODA BREAD
6 c. whole wheat flour
3 c. white plain flour
1 heaping tsp. baking soda
3 heaping tsp. baking powder
2 eggs
Approximately 2 1/2 c. plain yogurt, mixed with water to the consistency of buttermilk

Preheat oven to 375 degrees. Place all dry ingredients in large bowl. Combine with fingers.

In another bowl, mix the eggs and yogurt mixture. Make a well in the dry mixture and pour on some of the wet mixture. Mix with your hands until you get a nice dough that is soft and not too wet. Lightly flour a work top or pastry board. Divide the dough in half.

Make 2 flat rounds of bread on the board. Cut a deep cross in the middle of each loaf. Place in the preheated oven for 10 minutes, then reduce the heat to 350 degrees. Bake until the bottom of the bread sounds hollow when knocked. This takes about 30 minutes.
