PAELLA 
2 tbsp. olive oil
3 skinned, chicken breast, cubed
1 med. onion, finely chopped
2 cloves garlic, minced
1 sm. can undrained whole tomatoes; quartered
1/2 tsp. dried saffron
1 c. rice
1 lb. peeled, deveined shrimp
Salt and pepper to taste
3 sweet or hot Italian sausage
1 green pepper cut in 1 inch pieces
1 lg. bay leaf
1/2 tsp. dried thyme
1 c. water, add more if needed
1/4 c. finely chopped parsley
Dried red pepper, optional

Heat oil in large pot. Cut each sausage into 4 pieces and add them. Cook, turning often, about 3 minutes. Add chicken cubes, cook with sausage for 5 minutes longer. Add onion and garlic, cook and additional 2 minutes. Add saffron, bay leaf and thyme. Stir and add tomatoes, rice, water and salt and pepper. Cover and simmer 15 minutes. Add shrimp, cover and cook 8 minutes longer. Serve sprinkled with chopped parsley.
